Why I chose this recipe:
Spending the holidays in Vermont always allows me ample time to bake in the kitchen. With a snowstorm on its way, I am feeling as though friends and family will enjoy a warm seasonal cake. As the clouds start to hide the sun and the snowflakes start to fall, I plan on using my leftover cranberries from Christmas in this delicious Triple Berry Apple Cake.
I have adapted this recipe that I found from the Barefoot Contessa. While her recipes are fantastic, I thought the addition of raspberries and blueberries would add more depth of flavor and sweetness to the recipe, which is always preferred in my household. (Sometimes I even throw in some strawberries if I have those on hand as well.)

.Ingredients for Fruit Portion
1 cup fresh cranberries, rinsed and picked over for stems
1 Granny Smith Apple, peeled, cored and diced
½ cup raspberries
½ cup blueberries
½ cup brown sugar
1 Tbsp cornstarch
1 Tbsp orange zest
¼ cup orange juice
1 tsp cinnamon
Ingredients for Cake Portion
2 large eggs
1 cup granulated sugar
1 stick of butter, melted and slightly cooled
1 tsp vanilla
¼ cup sour cream
1 cup flour
¼ tsp salt
Ingredients for Sprinkle
1 Tbsp granulated sugar
1/8 tsp cinnamon
Directions
Preheat oven to 325 degrees.
To prepare fruit portion of the cake, combine all ingredients in medium bowl and pour into 10-inch pie plate.
In stand mixer with paddle attachment, beat butter and sugar until blended.
Add eggs and vanilla.
Mix on medium speed until combined.
Add sour cream and blend on medium speed until combined.
Finally add flour and salt and mix on low speed until fully combined.
Pour batter over fruit in prepared pan covering completely.
Sprinkle cinnamon/sugar mixture over batter. Bake for 55-60 minutes or until cake tester comes out with a few crumbs and fruit is bubbling on the edges.
Let cool slightly.
Serve with whipped cream or a scoop of your favorite vanilla ice cream.
