Why I chose this recipe:
I love shrimp and my friends know it. On a girls’ weekend away to our home in Vermont, a girlfriend treated us to her roasted shrimp recipe. I thought it was the easiest way to cook shrimp and they turned out to be the most flavorful shrimp I had ever had. I decided to add some kick to her recipe by serving the roasted shrimp with my delicious wasabi cocktail sauce. Don’t be scared of wasabi as it adds a depth of flavor that the horseradish does not. .Roasted Shrimp Ingredients
2 lbs. Fresh Jumbo Shrimp
1/8 cup Extra Virgin Olive Oil
2 tsp kosher salt
1 tsp freshly ground pepper
Wasabi Cocktail Sauce Ingredients
1 cup ketchup
2 ½ Tbsp horseradish
1 Tbsp lite soy sauce
1 Tbsp rice wine vinegar
2-3 tsp wasabi paste
Directions
Preheat over to 450 degrees.
Spray cookie sheet with cooking spray.
Combine all Wasabi Cocktail Sauce ingredients in one bowl and stir to combine.
Cover and chill until ready to serve.
Mix all shrimp ingredients in a large mixing bowl.
Place prepared shrimp on cookie sheet and spread them out in one layer. Roasted for 10 mins.
Remove from oven and place shrimp immediately on serving platter with wasabi cocktail sauce on the side for dipping.
