Why I chose this recipe:
My daughters and I are addicted to these nuts. I make a batch, keep them in the refrigerator and they snack on them all week as an after school. If there are any left, I add them to 90% of the salads I make and when friends are over, I put them out as an extra appetizer for friends to nibble on over cocktails.
So for an easy and delicious nibble to have on hand, the next time you are at Costco buy the larger bags of Almonds and Pecans, run home and whip up my QCK Roasted pecans and almonds, and
.Ingredients
3 cup Pecans
3 cup Almonds
3/8 cup Agave nectar*
1 tsp kosher salt, plus ½ tsp to sprinkle on top
1 ½ tsp cinnamon
½ tsp red pepper flakes
Directions
Preheat oven to 300 degrees.
Prepare large cookie sheet with parchment paper.
Mix first five ingredients in a large mixing bowl.
Spread nuts into one layer. Sprinkle with the additional kosher salt and red pepper flakes.
Roast for 70-80 minutes depending on desired degree of roasting. Remove from oven and let sit until room temperature.
Break into small clusters or individual roasted nuts. Store in airtight container in refrigerator for up to two weeks.
* Feel free to try Maple Agave too. The maple agave adds a nice twist on this yummy nibble.
