Why I chose this recipe:
While we were in Vermont this weekend enjoying the gorgeous weather, my husband looked on the kitchen island, in the refrigerator and in the freezer and realized there were no treats for him to enjoy. He turned to me, smiled and asked me to make his (recent) favorite oatmeal raisin cookies. How could I say no? Yet, my husband goes through phases with desserts and recipes. He used to love my old oatmeal raisin cookie recipe, but over the past year he decided the recipe no longer was his favorite. So I went on a mission and this recipe is what I came up with. It is a blend of old and new making a delicious cookie to serve either lakeside with some fruit (as I did), to bring to a picnic, or to sell at the children’s next bake sale. So grab some raisins and dried cherries at the store, whip up these new favorites and, in no time,
.Ingredients
1 ½ cups flour
1 tsp baking soda
1 tsp cinnamon
1/8 tsp nutmeg
½ tsp kosher salt
1 cup (2 sticks) butter, softened
1 1/3 cups brown sugar, packed
2 eggs
1 tsp vanilla
3 cups old-fashioned oats
1 ½ cups raisins
½ cup dried cherries
Directions
Preheat oven to 350 degrees.
Line cookie sheets with parchment paper. Set aside.
In medium-sized bowl, combine flour, baking soda, cinnamon, nutmeg and kosher salt. Set aside.
In stand mixer, combine butter and brown sugar.
Mix on medium speed until fully integrated.
Add eggs one at a time, scraping sides of bowl as needed.
Pour in vanilla and blend until fully combined.
Add flour mixture to mixing bowl and blend on medium until fully combined, scraping sides as needed.
One cup at a time, add oats to dough.
Blend until fully combined.
Finally add the raisins and dried cherries and mix on medium.
Cover and place in refrigerator to chill for at least 30 minutes.
Once dough is chilled, using a medium-side ice cream scoop (2-2.5 inch in diameter), scoop cookie dough onto prepared pan.
Bake for 10-12 minutes.
