Why I chose this recipe:
Many summer weekends we spend in Vermont enjoying watersports on the lake. Over the years we have gotten to know many families on the lake and almost every Saturday night someone hosts cocktails on their dock, aka Docktails. I always like to bring an appetizer for everyone to enjoy with our cocktails. This past weekend I made one of my summer favorites, this easy, delicious, fresh and colorful Mango Pineapple Salsa. The hardest part of this recipe is having a ripe mango and pineapple on hand to use. I also have used this salsa as a topping for halibut, swordfish and grilled chicken. .Ingredients
½ Pineapple, peeled, cored and diced
1 Mango, peeled, cored and diced
1 Jalapeno, seeded and diced
½ Red onion, diced
½ Red pepper, seeded and diced
Juice from ½ lime
2 Tbsp Extra Virgin Olive Oil
½ tsp Cumin
Directions
Combine all ingredients in medium bowl.
Mix ingredients together.
Chill until ready to service.
Serve with tortilla chips or over grilled chicken or fish
