Why I chose this recipe:
With Spring finally peaking up from under the snow banks, the season gets me excited for all the wonderful desserts that pair so well with warmer temperatures. If you are hosting Easter, this is THE recipe you should no doubt make for dessert to treat your family and friends.
My Lemon Rum Pound Cake recipe evolved over many years trying different recipes and adding my interpretations and twists. Please do not be scared of the rum, the syrup or the glaze. They all add such value to this yummy pound cake and really aren’t that hard. It may be an extra bowl or two to wash, but it is well worth it.

Cake Ingredients
2 ¼ cup cake flour, sifted
¾ tsp baking powder
¼ tsp salt
1 ½ cup sugar
Grated lemon zest of 3 lemons
5 large eggs
2/3 cup vanilla low-fat yogurt
3 Tbsp dark rum
7 ½ Tbsp unsalted butter,
melted and cooled
Lemon Syrup
1/3 cup fresh lemon juice
1/3 cup granulated sugar
Glaze
2 cups powdered sugar
3 Tbsp fresh lemon juice
Directions
Preheat oven to 350 degrees. Butter and flour 9x5x2 loaf pan. Place loaf pan on cookie sheet.
Sift flour, baking powder and salt together and set aside. Mix the lemon zest and sugar until aromatic in a standing mixer with paddle attachment for one minute. Add eggs one at a time and beat until mixture is pale and foamy. Mix in yogurt and rum. Gently add flour mixture in 3 additions, mixing between additions, until combined. Lastly, fold in cooled melted butter.
Spoon batter into prepared pan. Bake for approximately 1 hour until toothpick comes out with only a few moist crumbs attached. Remove from oven and let sit for 10 minutes. Meanwhile, over medium heat stir sugar and lemon juice for lemon syrup. Bring to a slow boil and stir until sugar is dissolved. Turn of heat and set aside. After cake has slightly cooled for 10 minutes, remove cake from loaf pan and place on cooling rack which has been placed over a cookie sheet. Then pour lemon syrup over the cake. Let cake cool completely. When cool, whisk powdered sugar and lemon juice together to create glaze. Drizzle glaze on top of cake to desired amount. Cool and serve.
