Why I chose this recipe:
I love fish. I particularly love salmon and all of it’s health benefits. I have many salmon recipes, but this is my “Go To” salmon dish. (I think I have served it to every family member and friend.) It is the perfect combination of a wonderful meaty fish and traditional Asian flavors. The small amount of bourbon adds a depth of flavor to the dish that is unparalleled to any other salmon dish I have ever had… anywhere. .Ingredients
1 cup packed brown sugar
6 Tbsp bourbon
¼ cup low sodium soy sauce
Juice of one lime
2 Tbsp fresh ginger, peeled and diced
½ tsp salt
¼ tsp freshly ground black pepper
2 garlic cloves, diced
8 (6oz.) salmon fillets
4 tsp sesame seeds
½ cup thinly sliced scallions
Directions
Combine first 8 ingredients in a large flat baking dish. Stir to combine.
Add salmon to marinade.
Marinate for at least 30 minutes and up to 4 hours.
Preheat grill on high.
Reduce heat to medium and grill salmon for 10-15 minutes depending on thickness and how well you like your salmon cooked. (For extra flavor, my husband grills the salmon in the marinade on the grill by creating an aluminum foil “boat” and placing the salmon in the boat with some marinade. However, this does lengthen the cooking time by a few minutes.
Boil the extra marinade and pour over the salmon when serving.
Sprinkle salmon with sesame seeds and scallions when serving.
