Why I chose this recipe:
Almost eighteen years ago I married my husband, John. As they say you marry the family as well. As it turned out, I totally lucked out. One of my favorite in-laws is my husband’s second eldest sister, Eileen. She and I have lots in common, but one of our similarities is our love of cooking and baking.
Over the years my family has always loved her goodies, particularly her banana bread. I thought I would put my own twist on her recipe by adding fresh blueberries. It is absolutely the perfect breakfast bread. Served with a side of fruit salad and any morning it will be easy to
.Ingredients
1 3/4 cup flour
1 1/2 cup sugar,
+ 1 Tbsp for topping
1 tsp baking soda
1/2 tsp salt
3 medium bananas
2 eggs
1/2 cup oil
1/4 cup + 1 Tbsp buttermilk
1 tsp vanilla
1/2 cup fresh blueberries
Directions
Preheat oven to 350 degrees.
Spray loaf pan with cooking spray and set aside.
Combine dry ingredients in medium bowl and set aside.
Break bananas into small pieces and mash bananas with a fork until few chunks remain.
Mix liquid ingredients with bananas in bowl of stand mixer. With stand mixer on medium speed, slowly add dry to banana mixture and mix well until fully combined.
Remove bowl from stand mixer and fold in blueberries.
Pour mixture into prepared loaf pan.
Sprinkle with the 1 Tbsp extra sugar and bake at 350 degrees for 60-70 minutes. Baking time will range depending on the humidity in the air.
