Why I chose this recipe:
I told you all that I am obsessed with Scones right now. This recipe came to me when I was visiting the King Arthur Flour store in Norwich, Vermont last week after I dropped my son at sleep-away camp in New Hampshire. There is no way I was driving by King Arthur Flour flagship store without stopping if I was within thirty miles. Gosh, that store is inspirational and fun. One might say it is a baker’s nirvana. Definitely grab a cart instead of a basket when you enter the store.
While enjoying every aisle, shelf and display, I found these Apricot Jammy Bits and thought they were be fun to use. So when I got home, I tweaked my blueberry scone recipe ever so slightly and came up with this recipe. You could replace the jammy bits with diced dried apricots, but, trust me, the jammy bits are worth the effort. (King Arthur Flour has other flavors as well that I just ordered.)
So if you want another easy morning breakfast or late afternoon treat that will disappear in minutes, whip these up and you will have homemade, delicious scones on your table in less than 40 minutes. Seriously! These scones are very easy to
!Scone Ingredients
2 cups flour
2 tsp baking powder
7 Tbsp sugar
¼ tsp salt
¼ tsp nutmeg
¾ cup apricot jammy bits*
½ cup sliced almonds
1 ½ cups whipping cream
½ tsp almond extract
Glaze Ingredients
1 cup confectionary sugar
¼ tsp almond extract
1-2 Tbsp water
Directions
Preheat oven to 400 degrees.
Prepare cookie sheet with parchment paper. Set aside.
Sift together flour, baking powder, sugar, salt, and nutmeg in medium-sized mixing bowl.
Add apricot jammy bits and sliced almonds.
Stir to coat apricot bits and almonds with flour mixture.
In small bowl, combine whipping cream and almond extract.
Stir to combine.
Pour cream mixture into flour mixture and mix until fully combined.
Using ice cream scoop, create twelve domes of batter on prepared cookie sheet.
Bake for 17-21 minutes.
Remove from oven.
Prepare glaze.
Drizzle glaze over scones.
Serve warm or at room temperature.
* Apricot Jammy Bits are these little bits of wonderful I buy from King Arthur Flour company. They are a blend of pureed apricots, sugar and pectin and have a soft, chewy texture when added to baked goods.
