Why I chose this recipe:
When Fall hits, the temperatures start to drop and the leaves begin to turn, inevitably I have to go apple picking. It’s a must in my house. While picking the apples is always a highlight for all ages, I especially like to bring the bags and bags of apples home and to start baking. This Apple Cake with Caramel Drizzle is one of my favorites. Of course, almost anything with caramel drizzled on top is going to be a favorite of mine. However, many family and friends alike agree.
The combination of apples, cinnamon and caramel seem to win the taste buds of all, whether you are serving dessert to your family on a Wednesday night or to a group of twenty-five for a dinner party. To make this dessert even more irresistible, I like to serve it with either Vanilla or Cinnamon Buns ice cream from Ben & Jerry’s. So if you don’t have time to frequent your nearest apple orchard anytime soon, run, don’t walk, to your grocery store and pick up the ingredients for this delicious cake and see how easy it is to
.Ingredients for Cake
3 cups cake flour
1 tsp baking soda
½ tsp salt
2 tsp cinnamon
½ tsp nutmeg
1 cup packed brown sugar
1 cup sugar
1 ½ cup vegetable oil
2 tsp vanilla
3 eggs
5 Granny Smith apples, peeled, cored and diced
Ingredients for Caramel Drizzle
½ cup heavy cream
¼ cup packed brown sugar
¼ cup sugar
4 Tbsp butter
1/8 tsp salt
Directions
Preheat oven to 350 degrees.
Spray your 9×13 glass pan with cooking spray and then flour the pan. Set aside.
Mix together flour, baking soda, salt, cinnamon and nutmeg, then set aside.
Put sugar, brown sugar and oil in the bowl of your stand mixer fitted with paddle attachment and blend until combined.
Add the three eggs, one at a time, beating well until each egg is fully combined. Once eggs have been incorporated, add the vanilla.
Slowly add flour mixture to batter. Mix well until combined thoroughly.
Add apples and mix on low until they are evenly distributed. Pour batter into prepared pan and bake for 50-60 minutes.
Poke holes all over the cake with a toothpick as the cake is cooling.
Prepare caramel drizzle by melting the butter in a small saucepan over low heat. Once butter has melted, add both brown and granulated sugar and the salt.
Increase the heat to medium, stir and cook for approximately 2 minutes. Add cream, bring to a boil and stir constantly for 2 more minutes.
Pour caramel drizzle over entire cake. This wonderful cake can be served warm, at room temperature or cold.
