Mango Pineapple Salsa

Why I chose this recipe

Many summer weekends we spend in Vermont enjoying water sports on the lake. Over the years we have gotten to know many families on the lake and almost every Saturday night someone hosts cocktails on their dock, aka Docktails. I always like to bring an appetizer for everyone to enjoy with our cocktails. This past weekend I made one of my summer favorites, this easy, delicious, fresh and colorful Mango Pineapple Salsa. The hardest part of this recipe is having a ripe mango and pineapple on hand to use. I also have used this salsa as a topping for halibut, swordfish and grilled chicken. So pick up these ingredients at the store this week and they should be ready to use this weekend for an easy appetizer that will Impress Without Stress.

You might be asking yourself about the name of the blog, Quick Chick Kitchen, especially since these recipes are not necessarily ones that can be whipped up in ten minutes.

However, don’t be intimidated, they are not hard and are worth the effort. My motto is Impress without Stress! While this blog and hopefully a following cookbook have been a dream of mine for years, the name came to my husband and me in 2008. I was fortunate enough to have the opportunity to run the Boston Marathon that year. Now, don’t you dare think I actually qualified for the Boston Marathon. I bought my way in. By agreeing to run in memory of my father-in-law to raise money for Memorial Sloane Kettering, they gave me a number.

My father-in-law had succumbed to stomach cancer in 2006 after a valiant fight and great care at MSK. I had told my father-in-law that the next marathons I ran, I would run in his honor. However, don’t get any ideas that I ran or have ever run quickly. I only aspire to be a Quick Chick. So while in Boston checking in for the race I had to hit the Race Expo where all the race gear is prominently displayed. (If you are going to run 26.2 miles, you HAVE to treat yourself to some race memorabilia to commemorate the adventure.) After perusing the Expo for a few minutes, I found this great Boston Marathon running shirt for the female entrants with “Quick Chick” on the front. I thought this phrase was very catchy for the female runners brave enough to attack Heartbreak Hill.

quick-chick-smWhile I am not the fastest runner, the phrase resonated with me. I aspired to be quick. Believing takes you half way there. My husband thought I could use that phrase to combine my love for baking and cooking with my love for running. Maybe sharing my baking and cooking with family and friends would take some of the mystery away and they would be able to Impress without Stress like I strive to do.
